Orange Soy Salmon & Green Beans

From our skinny table to yours...
MMM orange glazed salmon, we've had many variations at many different restaurants and loved each one!  We don't know about you, but when we hear glaze, we hear calories and certainly don't like that!  Like we have said, we like to try and include heart healthy fatty fish into our weekly diets so, we wanted to try and recreate this meal idea, and feel good about eating it!  The 'glaze' in this recipe comes from mandarin oranges, lemon juice, fresh ginger, garlic, soy sauce and a just a hint of brown sugar!  The fish comes out of the oven with so much flavor, it's hard to believe it's actually good for you!   We chose to serve this dish up with fresh green beans, simply sauteed up with a bit of soy sauce and garlic.

We loved this dish and had even our hubbies (who never request salmon) scraping the plate!  This meal is so simple to put together, it's perfect for any busy weeknight.  Overall it takes about 5 minutes prep time, just let your oven go to work, then enjoy this healthy dish! 

Orange Soy Salmon & Green Beans
1 pound wild caught salmon
Olive oil
Garlic (5-7 cloves)
Grated ginger
Mandarin oranges (10-15 segments)
1 Tbs brown sugar
1 lemon
1 1/2 tbs soy sauce
1/2 pound fresh green beans
2-3 fresh basil leaves

Let's get cooking!
1. Preheat oven to 400 degrees
2. Place salmon filet on baking sheet covered with enough tin foil, make sure there is enough tin foil so you are able to 'tent' in the salmon
3. Cover salmon with lemon zest and juice.  Add in 4-5 minced garlic cloves and the grated ginger.  Cover salmon filet with mandarin oranges, and chopped up basil leaves.  Sprinkle on brown sugar and top with soy sauce.  Bend foil up at each end to 'tent' to cover and cook for approx 30 minutes
4. While salmon is cooking, cut the ends off of the beans and saute in olive oil, soy sauce and the remaining garlic until tender (approx 5-7) minutes.
5. Slice salmon into 3-4 portions and serve!!  Hope you enjoy :)
