From our skinny table to yours...

It's football Sunday and as much as we enjoy football, we just can't sit in front of the TV all day, so we like to take the time to prepare breakfast for the week!  'Oatmeal pie' as our husbands like to call it!  This is a heart healthy and delicious treat to start the day off with!  This is a super easy, one dish meal, with so many nutritional benefits.  There is no added sugar in this breakfast and simply sweetened up with the natural sugars from fruit.  We choose strawberries, blueberries, and bananas in this particular one, however there are endless options and it's always fun to mix it up every week!  This is a great 'grab n go' breakfast, and can be enjoyed cold or heated up!

Some other 'oatmeal pie' favorites are banana & walnuts, peanut butter & banana, pumpkin pie (simply use pumpkin puree & cinnamon), apples & cinnamon... the list goes on!  Just swap out the fruits and flavors until you find your personal favorite!

Grab n' Go Oatmeal Pie
Ingredients:
2 cups oatmeal
1 banana
1 cup strawberries
1/2 cup bluberries
1 tbs dark cocoa powder
1 tsp cinnamon
2 tsp baking powder
1 tsp vanilla extract
1 strawberry greek yogurt
1 egg white
2 cups non-fat milk

Let's get cooking!
1. Grab a baking dish spray with olive oil to avoid sticking
2. Cut up the fruit and add all the fruit plus the oatmeal to the dish
3. Add cocoa powder, cinnamin, baking powder and mix well until everything is combined
4. In a separate bowl, whisk together the milk, greek yogurt, egg white and vanilla extract
5. Simply pour evenly over oatmeal and place in over for 35 minutes at 400 degrees.
Serves 8 yummy portions!

    Of course, we hadn't originally listed our calorie counts and are still updating! This 'pie' serves 8 and has 142 calories per serving!
    Fat: 1.5 grams
    Carbs: 25 grams
    Protein: 7.2 grams!
